Tunia’s Cantomoro is a wonderfully personal yet deeply Tuscan interpretation of the international variety Cabernet Sauvignon. Hailing from a parcel planted in 2005, this vintage was left to fully ripen in parts to surmaturity so as to extract more fruit in a rather difficult year and therefore balance the green vegetal notes. It ferments spontaneously and macerates on the skins for 30 days and then ages for 18 months 60% in large wood and 40% in steel, followed by 12 more months in the bottle. Smoked black cherries, pickled green peppers, candied capers and ripe black plums with balsamic currents and spiced notes.
