SANCERRE AUKSINIS MACERATION 2014
Sebastien’s declination of a natural orange wine, here with much more extended skin contact, shows perfectly how varietal and terroir can be sublimated and exalted by maceration and the vignerons’ masterful touch. Coming from a single biodynamic vineyard of 50 years of age on silica-limestone soils, it sees wild fermentation in steel with 30% of botrytized grapes and a maceration of 1 week, followed by 36 months of elevage in used barriques before bottling with no fining, filtration or added SO2. The profundity and sheer complexity here are as otherworldly as they are sublime to witness: ripe jackfruit with red curry and smoked cinnamon form a focused nucleus, around which dance and swirl marzipan with blood orange rind, saffron honey and gingerbread with toasted almonds.
