Fermented with native yeasts, it sees 100 days of skin contact in amphora and a long aging in chestnut barrels. Powerful, dense and soulfully evocative, with minerality and taste to spare: dried jackfruit with saffron and ginger, Byzantine spices with candied kaffir lime, incense and salted caramel.
