Pacina is the wine that is perhaps most representative of Giovanna’s heartfelt vision of what a natural Chianti, actually any Chianti at all, should be like. A wine where the family’s history, their love for their land, and their passion for natural winemaking are intrinsically conjoined with the farm’s aromas and the very soul of the grapes. A blend of Sangiovese, Canaiolo and Ciliegiolo, it ferments with its native yeasts in cement and macerates with the skins for about 6 weeks, it then sees an elevage of 6 more months in cemente, 14 in large oak and no less than 18 in the bottle. It roars and sings to the nose and palate with a symphony of complex notes and expressive tannins: woodland humus, ripe damson plums, Zanzibar spices with bramble, wild fennel and ripe mulberries.
