IL ROSPO 2016
Rospo, which in Italian means “toad”, is a blend of long-naturalised Cabernet Sauvignon farmed biodynamically in the heart of Chianti. It slowly ferments with its own yeasts and ages in cement tanks, aging then furthermore in the bottle with no trickery such as fining or filtration. It’s a deeply territorial declination of this international variety, electrically fresh and bursting with sincere and dynamic fruit: Morello cherries, herbal undertones, green peppercorns, tobacco and rosemary.
