BACCABIANCA
A veritable testament to the unending expressive potential of the typical Piedmont grape Cortese, which, when handled masterfully handled by a genial vigneron like Guido, can give us natural wines (orange wine in this case) of mind-numbing power and depth. Patience and love for terroir are keys here, as the 20 to 40 years old grapes see a long 60 days maceration and an even longer period of elevage in large wood and bottle before being released no sooner than 7-8 years after harvest. A luminous amber in the glass, it shimmers with enticing aromas and bold flavors: chutney of quince and smoked lavender with incense and dried figs, pink peach confit with sage and cloves.
