This is 100% Chardonnay from a stunningly beautiful 40-50 years old vineyard on clay-sandy soils farmed organically and biodynamically. Spontaneously fermented and aged in barrique with nothing added or taken away, it bursts with fresh and vital complexity: Granny Smith apples braised with Calvados, raisins, pandan leaf and orange blossom water.
