LES PETIT CERISES 2015
This special edition of Caspri’s Ciliegiolo allows the character of this traditional but almost unknown Tuscan grape to truly shine. It undergoes wild fermentation with its native yeasts in tronco-conical wooden vats, then sees elevage of of steel for about 1 year before being bottled with no fining, filtration or added SO2. A joyously explosive and youthful personality: fresh raspberries with bergamot and sage, cumin and orange peel.
