Aldo’s Catarratto-based orange wine is a solar and proud love song to the unadulterated majesty of real Sicily. The vineyard, we are looking at a single cru here, is farmed only with natural methods, the grapes are fermented with their wild yeasts awith 3 weeks of skin contact in steel, where the wine ages for 8-12 months before being bottled unfined, unfiltered and with no added SO2. The deeply layered minerality of Catarratto paints a beautifully Art Noveau canvas together with bright and carnal fruit: briny marine winds, fresh prickly pear with oregano and pink salt, grilled clementine and lemon blossom with buckwheat.
